Detection and Quantification of Adulteration in Olive Oils by Global Method and Extinction Coefficient
نویسندگان
چکیده
The global method for detection of extraneous oils in different kinds of olive oils as a new method for identification of adulterations is applied using HPLC and GC data by calculations ECN (equivalent carbon number) and R (which is the ratio r ECN42/ r ECN44 for genuineness of all olive oils) according to IOOC method. In this research the global method and ECN42 (difference between the actual and theoretical ECN42 triglyceride content) has been applied for identification of adulterations in olive oils with sunflower, colza and soybean oils. Also the extinction coefficient was calculated from spectrophotometric data and used as a supplementary method in detection of the adulterations and classification of olive oils. The synthetic mixtures were made by 1, 5, 7 and 10 percent of sunflower, colza and soybean oil in olive oil respectively. The results showed the detection of adulteration in the 1 % of the seed oils can be detected.

Adulterations in Some Edible Oils and Fats and Their Detection Methods
Vegetable oils and fats have a big contribution in our diet as cooking or frying oil, salad oil or in food products formulation. They are important from nutritional and economical point of views. Their authenticity is a serious issue since old time. Some edible oils and fats such as olive oil, cocoa butter and milk fat are so expensive which makes tempting to adulterate them with other lower pr...

The European project FAIR-CT96-5053 concerned the application of the FT-Raman and infrared spectroscopy in food chemistry and quality control. Our research mainly concerned the study of the potential of Raman spectroscopy and the comparison with the results achieved in infrared spectroscopy. The discrimination of virgin olive oil from other edible oils, and the detection and quantification of v...
متن کاملDetection of Virgin Olive Oil Adulteration Using Low Field Unilateral NMR
The detection of adulteration in edible oils is a concern in the food industry, especially for the higher priced virgin olive oils. This article presents a low field unilateral nuclear magnetic resonance (NMR) method for the detection of the adulteration of virgin olive oil that can be performed through sealed bottles providing a non-destructive screening technique. Adulterations of an extra vi...

ABSTRACT: In this study, an analytical method is developed to determine 15 polycyclic aromatic hydrocarbons (PAHs) in olive and refined pomace olive oils using HPLC coupled with a fluorescence detector. The standardised method of ultrasound-assisted solvent extraction consisted of liquid–liquid extraction with organic solvent and purification on C18 and Florisil bonded-phase cartridges was modi...

Overview Purpose: To examine the use of targeted principal component analysis (PCA) with HPLC-charged aerosol detector data as a means of determining adulteration of olive oils. Method: Oil samples were analyzed as both untreated and hydrolyzed, using a C30 HPLC method and charged aerosol detection. PCA results were determined using peak area percent values of the acylglycerides and free fatty ...
